Cocktail Inspiration

The drink Cascara made from the cherries of coffee

Ingredients

  • 45 Ml. Licor 43 Original
  • 8 Ml. Luxardo Maraschino Liqueur
  • 15 Ml. Spiced Rum (Mount Gay or equivalent)
  • 60 Ml. Cold Brew Concentrate
  • 60 Ml. Soda Water

Method

Cocktail Preparation
  • Combine all ingredients (except the soda water) in a shaker tin.
  • Hard shake.
  • Pour into collins glass.
  • Fill with draft rocks and top with 60 ml soda water.
  • Garnish with orange peel.
Coffee Preparation
  • Batch Cold Brew
  • Medium Grind Coffee High Quality Dark Roast. (I used Counter Culture's 85 percent Guatemalan, 15 percent Ethiopian.)
  • Mix 1200 grams water to 150 grams coffee (1:8 ratio) in a large sealable plastic bowl.
  • Store for 18 hours to steep.
  • Filter through chemex. Pouring into chemex filter, dump grounds, and store cold.
