Cocktail Inspiration
The drink Cascara made from the cherries of coffee
Ingredients
- 45 Ml. Licor 43 Original
- 8 Ml. Luxardo Maraschino Liqueur
- 15 Ml. Spiced Rum (Mount Gay or equivalent)
- 60 Ml. Cold Brew Concentrate
- 60 Ml. Soda Water
Method
Cocktail Preparation
- Combine all ingredients (except the soda water) in a shaker tin.
- Hard shake.
- Pour into collins glass.
- Fill with draft rocks and top with 60 ml soda water.
- Garnish with orange peel.
Coffee Preparation
- Batch Cold Brew
- Medium Grind Coffee High Quality Dark Roast. (I used Counter Culture's 85 percent Guatemalan, 15 percent Ethiopian.)
- Mix 1200 grams water to 150 grams coffee (1:8 ratio) in a large sealable plastic bowl.
- Store for 18 hours to steep.
- Filter through chemex. Pouring into chemex filter, dump grounds, and store cold.
