Cocktail Inspiration

Connection is all about bringing together things that work harmoniously starting with the idea of how different elements can relate to each other just like coffee does to Liquor 43 in such excelent way The merging of two worlds the reflection of my two professions

Ingredients

  • 20 Ml. Licor 43 Original
  • 30 Ml. Banana Extract
  • 20 Ml. Aeropress Coffee (1:5 Ratio)
  • 10 Ml. Rum
  • 20 Ml. Egg white
  • 3 Drops Cocoa bitters

Method

Cocktail Preparation
  • For the Banana extract, blend the banana with just a little of water (50mL per banana) Then strain to get a more consistent liquid.
  • Prepare the coffee acording the steps explained later on this list.
  • In a shaker (Boston shaker recommended) add each ingredient following the recipe above, except the bitters.
  • Add ice and shake to chill the cocktail and mix all together.
  • Strain and remove ice from the shaker and shake again without ice (dry shake) to emulsify the egg white and create a firm foam.
  • Double strain the cocktail in a Nick and Nora glass (Previously chilled)
  • Add three drops of cocoa bitter on top and garnish with an edible flower
Coffee Preparation
  • For the coffee, the idea is to keep fruit aroma (Ripe fruits or citrus ar great) and some cocoa and caramel (Mid roast). I used a Chiroso variety with ripe plumb aroma, sweet and mid roast. For the recipe keep the basic flavors.
  • Heat up water until it reach 87-90 Celcius.
  • Mesure the amount of coffee that's gonna be used (Ratio 1:5, for 200mL of water use 40gr of coffee)
  • While heating, grind the coffee (Fine grinding)
  • With part of the hot water, clean and prepare the aeropress to be used, add two papper filters on the aeropress portafilter and put some hot water before brewing.
  • Add the coffee in the aeropress and start with adding water in 25 seconds.
  • Mix with a spoon durnig 15 seconds and let it rest for other 15, then mix again 10 sec, put the portafilter and turn it over.
  • Add some light weight with your hands and arms until the press is down and the coffee is ready.
