Cocktail Inspiration

Encuentro, Spanish for "meeting", is born from my interpretation of a carajillo mixed with a New York sour. In this case we combine the delicate and nuanced flavors of Licor 43 with the fresh and citrusy flavor of lulo, and the light woody touch provided by amontillado sherry, along with an unmatched coffee from Salento, Quindio, Colombia which provides subtle notes of vanilla, caramel, and rum raisin. This is what makes this Meeting of flavors something exceptional.

Ingredients

  • 30 Ml. Licor 43 Original
  • 40 Ml. Lulo (Naranjilla) Extract
  • 15 Ml. Amontillado Sherry
  • 22 Ml. Cold Brew

Method

Cocktail Preparation
  • In the shaker add the ingredients except for the cold brew.
  • Add ice to the shaker and shake for 15 seconds.
  • Serve in an old fashioned glass with a large ice cube.
  • Add the cold brew without mixing completely with the other ingredients to make a color contrast
  • Garnish with coffee beans or a fresh basil leaf

Coffee Preparation
  • We will use a Castillo Naranjal variety coffee, with a black honey process, and prolonged fermentation of 100 hours.
  • Grind coffee with a medium coarse grind
  • In paper or cloth filters, make four balls each of 20 grams and tie well with the help of a thread.
  • Add the coffee balls to a sealable glass container with a capacity of at least one liter
  • We will use a 1:8 ratio, so we will add 640 ml of clean water without chlorine
  • We will let it rest for 48 hours in the refrigerator.
  • After 48 hours, we remove the coffee balls and filter to remove any residue that may remain in the cold brew.
  • Bottle and save for when you need to use it in our preparations or drink it alone.
