  • 44 Ml. Licor 43 Original
  • 44 Ml. Clement Mahina Coconut Rhum
  • 44 Ml. Pineapple Juice
  • 30 Ml. Espresso
  • 1 Drops Egg white (1 Whole Egg)


Cocktail Preparation
  • Pour all ingredients including egg white into a shaker
  • Add ice and shake vigorously for 10-15 seconds
  • Using a Hawthorne Strainer, strain liquid into the small part of the shaker and discard the ice
  • Dry shake vigorously for 10-15 seconds and strain into an Old Fashioned glass
  • Express and discard an orange peel over the top of the foam
  • Garnish with 2 pineapple fronds and 2 edible flowers

  • Coffee used: La Colombe' Nicca
  • Method of extraction: Espresso
  • Gr. Of dry coffee used: 15gr
  • Gr. Of liquid produced: 60ml
  • Water temperature: 92-96ºC
  • Extraction time: 15-20 seconds
