I am a bartender very passionate about my profession; I study gastronomy and I think is a perfect complement to the elaboration of cocktails.
I am 26 years old and 3 of them as bartender.
Ingredients
- 30 Ml. Licor 43 Original
- 80 Ml. Gin selva
- 45 Ml. Infusión coffee
- 30 Ml. Lemmon juice
- 20 Ml. Simple Syrup
- 1 Oz. Coriander
- 1 Oz. Albúmin
- 1 Oz. unflavored gelatin
- 50 Ml. Water
Method
Cocktail Preparation
- Put borra of coffee to infuse with 60 ml of selva gin and filter on paper V60
- In a siphon place the lemon juice , the simple Syrup , albumin, coriander and gelatin previously hydrated with hot water
- In a shaker place 45 ml of the coffee infusion, the remaining gin (20 ml) and 30 ml of liqueur 43... shake gently with a square ice and serve
Coffee Preparation
- How sustainability method use the coffee erase of a fine grinding espresso for 24 seconds and is the infusion with gin, simulating the Pour over method
