My name is Carlo, I have been working for 11 years as a bartender in restaurants like Maido and Astrid y Gaston, both in the 50th best restaurants and in Sips Barcelona, 3rd in the world.
Ingredients
- 22 Ml. Licor 43 Original
- 30 Ml. Ron Millonario 15 years
- 15 Ml. Xerez Palo Cortado
- 15 Ml. Sinple syrup
- 60 Ml. Cold brew with cacao beans
- 15 Ml. Lemon juice
- 60 Ml. Fresh milk
Method
Cocktail Preparation
- In a bowl, mix the rum, sherry, simple syrup, cold brew and lemon juice.
- Then in another tank we put the fresh milk and add the previous mixture
- Strain through a paper filter and add the sherry and the liqueur 43
- Cool and serve in an old fashioned with 1 large ice and finally decorate with a cocoa cookie
Coffee Preparation
- Infuse the coffee (typica and caturra) and forastero, together with 600 ml of water
- Let stand for 2 hours, strain and reserve
