I’ve been at Lady Jane for about 2.5 years. I really enjoy contributing to our very creative cocktail program. Most of my cocktails are inspired by food and nostalgia. This one is no different.

Cocktail Inspiration

Espresso Martini and Carajillo and Mexican Hot Chocolate

Ingredients

  • 15 Ml. Licor 43 Original
  • 15 Ml. Amargo-Vallet Amargo
  • 8 Ml. Bittermans Xocolatl Mole Bitters
  • 15 Ml. Demerara Gum Syrup
  • 30 Ml. Cold Brew Concentrate
  • 45 Ml. Rey Campero Espadin Mezcal
  • 6 Drops Saline Solution

Method

Cocktail Preparation
  • Combine all ingredients in a shaker tin with ice.
  • Shake until chilled.
  • Fine strain into a coupe.
  • Garnish with grated cinnamon.
Coffee Preparation
  • For our cold brew concentrate, we use a 5:1 water to coffee ratio.
  • We take our ground coffee and put it into a toddy bag.
  • We submerge the coffee bag into the water and place a weight on top to fully immerse.
  • Our steeping process takes 22 hours.
  • After 22 hours we remove the bag and double strain the cold brew.
  • Then we deli and keep in a cooler for up to a week.
