Icarus’ Sol is a triple entendre coming from my thought of clouds when looking at it. Icarus flew to the sun (sol), The sole of his feet as he walked the clouds, and his soul when amongst them.

Ingredients

  • 30 Ml. Licor 43 Original
  • 30 Ml. Heavy Cream
  • 15 Ml. Green Chartreuse
  • 22 Ml. Giffard's Banane Du Bresil
  • 22 Ml. St. Elizabeth's Allspice Dram
  • 30 Ml. Espresso
  • 6 Dashes Saline

Method

Cocktail Preparation
  • In a shaker pour 22ml(.75oz) Giffard Banane Du Bresil, 22ml (.75oz) St. Elizabeth's Allspice Dram, 15ml (.50oz) Green Chartreuse, 30ml (1oz) Espresso
  • In a separate shaker pour 30ml (1oz) heavy cream, 30ml (1oz) Licor 43, 6 dashes saline
  • Ice the first shaker with the cocktail base
  • Dry shake the second shaker with the salted foam and shake the cocktail base for 8-10seconds
  • Double strain cocktail base into chilled cocktail coupe
  • Gently open pour the foam on top
  • Garnish with 3 espresso beans and rosemary sprig

  • Brew 1oz of espresso
