Ingredients
- 35 Ml. Licor 43 Original
- 88 Ml. Italian espresso
- 10 Ml. Vanilla sea salt caramel air foam
- 10 Ml. Grated Parmesan cheese
Method
Cocktail Preparation
- Pull Italian espresso shot over two small cubes of Italian Parmesan cheese
- Create vanilla sea salt caramel syrup by: caramel using sugar, adding water, salt, and vanilla extract
- Use vanilla sea salt caramel syrup, add soy lechitin, and create air foam
- Stir espresso and licor 43 over ice
- Strain with julep strainer into a nick and nora or coupe glass
- Top with vanilla sea salt caramel air foam
- Garnish with grated Parmesan cheese
Coffee Preparation
- Put water into bottom portion of a moka
- Add espresso into chamber
- Put two small cubes of Parmesan cheese into top of moka
- Boil the water to create the pulled shot of espresso
