Mystical Gold

By JUAN JESÚS SANDOVAL

México

The cocktail that welcomed me to my beautiful job was a carajillo, so for me it is an honor that my first competition is with liquor 43

Cocktail Inspiration

My inspiration was both cultures and representing Mexico with our flavors

Ingredients

  • 30 Ml. Licor 43 Original
  • 15 Ml. Mezcal
  • 10 Ml. ginger beer reduction with angostura bitter
  • 3 Dashes Saline solution 80:20
  • 7 Drops Soy lecithin
  • 45 Ml. Spicy cold brew with coriander seed, pink pepper and cardamom

Method

Cocktail Preparation
  • In a mixing glass add liqueur 43 original, spicy cold brew, saline solution and the Mexican touch: mezcal
  • Perform the stir method for 30 seconds and then serve in a previously chilled short glass.
  • To our ginger beer reduction add soy lecithin to then emulate and thus obtain our ginger beer air
  • Place our air at the top of the cocktail simulating the foam of a classic shaked carajillo
  • We finish decorating with edible golden petals and now our mystical Gold is ready to drink.
Coffee Preparation
  • Heat 500 ml of natural water for two hours at a temperature of 160 degrees Fahrenheit, along with 6g of coriander seeds, 4g of pink pepper and 2g of cardamom.
  • Now that our infusion is ready, we must add 50g of medium-high roasted ground coffee.
  • Let it marinate for 12 hours in a cold environment or preferably in the refrigerator.
