I’m a trainer and educator for Dancing Goats Coffee. I’ve been in specialty coffee for almost 8 years. I love creating fun, new drinks for our cafes and pouring latte art.

Cocktail Inspiration

My cocktail is inspired by our sun-dried Costa Rica La Minita. It's my favorite of our coffees with notes of orange zest and maple. This drink is bright and refreshing like the summer sun.


  • 25 Ml. Licor 43 Original
  • 45 Ml. Big Gin London Dry Gin
  • 25 Ml. Dole Pineapple Juice
  • 60 Ml. Fever Tree Indian Tonic
  • 12 Drops Bittermens Elemakule Tiki Bitters
  • 30 Ml. Double Espresso


Cocktail Preparation
  • Fill a highball glass with ice
  • Add gin, Licor 43, pineapple juice, and tonic to glass and stir
  • Drop tiki bitters over the drink
  • Prepare espresso
  • Add espresso to cocktail shaker and add a scoop of ice
  • Shake espresso for 15 seconds
  • Strain espresso over the tonic using a wide spoon to float the espresso on top
  • Squeeze one strip of orange peel over the espresso and garnish with the peel

  • Coffee Used: Medium roast Costa Rica
  • Weight of Dry Coffee: 19 grams
  • Weight of Espresso Shot: 30 grams
  • Shot Time: 30-33 seconds
